Ingredients
- Goat Brain – 4 pieces
- Onion – 1 medium, sliced
- Green Chillies – 2
- Ginger-Garlic Paste – 1 tsp
- Turmeric Powder – ¼ tsp
- Chilli Powder – ½ tsp
- Black Pepper – ½ tsp
- Curry Leaves – a few
- Salt – to taste

How to Prepare
1. Clean gently
Rinse the goat brains carefully in cold water and keep them aside. Handle them gently as they are very soft.
2. Sauté the onion
Heat oil in a pan. Add curry leaves, sliced onion and green chillies. Cook until the onion becomes soft.
3. Add the spices
Add ginger-garlic paste, turmeric powder, chilli powder, black pepper and salt. Mix well and cook for about a minute.
4. Cook the goat brain
Gently add the goat brain pieces to the pan. Cover and cook on a low heat for around 5–6 minutes, until cooked through and piping hot.
Stir very gently so the pieces do not become too soft or break apart completely.

Finish with a little extra black pepper or fresh curry leaves if you like.
